Could I do it and have it boot? Will Swap Magic recognize DL DVD-Rs and will the PS2 have any difficulty reading a burnt DL-DVD as opposed to an officially "pressed" DL game?

Not possible with Swap Magic. Your options are 1) Rebuild the game to fit on a standard 4.7GB DVD5 disc, 2) Buy and install a modchip with dual-layer support.

There are DVD5 versions of God of War out there on the net, but piracy is illegal so I will rule out that option.

I already have the ISO.

If someone could do it FOR ME, things would be easier but as it stands; making GoW fit onto a single-layer DVD is more difficult than what I had to do to make Gran Turismo 4 work.

Then as above, if you want it that bad download the version off the net that is already DVD5. Why would someone take the time to shrink your ISO when you could just get the already shrunk version yourself.
