Is it possible when rebuilding an iso to change the songs used in the game?

No for various region including:
>Songs being in compressed files.
>LBA Check in games.
>Songs being in encoded differently.

It is possible with one such game called GuitarHero (1,2)
if you are interested in that then go to Scorehero.com
for more info.

It is possible if there are softwares made specifically for that game.
