hi, i'm wondering which of these cables would allow me to use 480p,720p,1080i for my xbox? thanks

Intec Universal AV & S Cable
or
MadCatz Universal S-AV Cable

and if none of these will enable 720p etc., which one would you guys recommend?(one that isn't too expensive)

Neither of the ones you linked will get you an HD signal. In order to get HD you need component cables. I have one similar to this and it works great. Check this link
