I've done a lot of research of the subject and haven't been able to find clear information. Are there any installations that don't require scraping down the actual chip (this seems like very delicate work that could damage the console permanently)?

you dont have to do any scraping or cutting for a dsb chipset all you do is install your favorite modchip and your set.... also check this site http://nintendo-scene.com/wiitracker

Oh yes indeed you need to cut into the d2b chip if it one with cut legs.

As for the chip to use, in my shop we usually install wiikeys. Mainly because the distribution of those chips is done in a "serious" way, meaning i dont have to deal with companies that really are only a private person which cause tax/paperwork problems.

As wiikey.cn is down, my bet would be on wiinja deluxe if there is ever a need for another update. The person who develops the wiinja code always seem to get it right. Just look at the audiofix history of other chips, took a while for wiikey to get their code straight.

Cyclowiz also have good code, but the upgrade procedure is a mess. You need to mount a on/off switch to upgrade, and I have seen my share of cyclowiz installs coming back with broken switches and/or failed upgrades.

WIID looked like a dead project for a while, but they finally got an update out, but in my opinion the build quality of them are below wiikey/cyclowis. Wiinja are sold just as programmed pic chips, so there is no build quality relevance :-)
