Which Display mode should i select on my DVD Player?

Im watching on a standard definition Sony 27" TV, using Component (red blue green) video cables.

I was playing around in the system menus on our Philips DVD622 and under video settings there were 3 choices for display:

16:9
4:3 Letterbox
4:3 Pan And Scan

Does picking one affect all movies put in, or does it only affect certain ones? is there any one that is better than the other? i assume i SHOULDNT select 16:9 because thats a widescreen ratio and we have a non widescreen tv... is that true? and if so, between letterbox and pan and scan which one is better for watching movies?

If it helps, i refuse to watch fullscreen movies, so all mine are in widescreen
