mencoder mkv soft subs?

I have a few mkv files I want to convert to xvid so I can watch them on my 360 over the LAN. I wrote a perl script to take care of this for me easily, but these mkv files have softsubs embedded into the files and I want them to appear in the resulting avi files. I've looked through google and the mencoder docs and can't find anything that'd allow me to do this. Can anyone suggest a way to do this?

If I have to use something other than mencoder (like megui or such), let me know how I can re-encode the mkv as losslessly as possible. I know how to do more or less lossless conversion with mencoder but have very little experience with other tools.
