As soon as I try to back up I get a "Target Size Exceeded" The current DVD size is too big! If you continue you may not be able to burn the resulting file.

Assuming your hard drive has enough space on it:

This is usually due to copy protection that shrink is too old to handle, so to hopefully get around this, try ripping the video files to your HDD using DVDFab decrypter, then use shrink to open the files with and complete the backup process.

dvdfab decrypter to rip dvd shrink to transcode(sometimes you will need to use FixVTS or VOB Blanker to clean the file before transcoding with dvd shrink) then imgburn burn.
