hot to do DVD subtitle in 1,2,3 way?

hi, i've been searching for the last couple weeks on how to add subtitles on a DVD that i already ripped to my HD and cant really get a clear way.
theres too many ways, too many formats, too many Divx, Avi, VCD thingys that i dont think i need, all i need is to rip a DVD to my HD, add my own language subtitle to it, then burn it after compressing it with dvd2one to a dvd to play it on TV and be aple to change the subtitles with the remote.
thats it, thats all what i need.. is it possible or not?
im on Mac, but if the Mac cant do it, ill do it on PC, just i need a real help about this..
