I picked up a system that has a WiiKey built in and it plays Wii games and backup games with no problems.
I have tried to play some VC games such as GameCube, etc. and they all get stuck on the Boot Screen which gives options such as "Boot DVD" or "Show Credits". I cannot move or select in these screens in order to start the game...
I thought I might need the Classic Controller to move/select, so I bought one, but that didn't help. Maybe I need to use a USB Keyboard?
What exactly are you trying to do? Gamecube games are not virtual console games, and neither are roms run through homebrew emulators. Both gamecube games and emulators require a gamecube controller.

You should have researched how to use the disc- would have saved you a lot of time.
What you are using is called GCOS- GameCube Operating System- thus you need to use a GC controller to move through the menus and play the roms (they are not Virtual Console games).
