I'm currently using Pinnacle Studio and it's just such a massive resource hog that I would like to use an alternative.

I'm converting Multiple AVIs to a single DVDR, adding chapters between some of the AVIs.

I would also like to be able to add text captions to the video, and a DVD Menu.

Pinnacle Studio is doing all of this... it's just slow process.
