I've heard different stories, some people say that at low levels the load times are increased, but other times whole sections are gone, like videos and music. I don't want to download a CSO, play through it, only to find out I'd missed some nice CG cutscenes or dialogue.

What exactly happens when I compress it from ISO to CSO? What's the tradeoff?

When u compress it to a cso or umcompress it to a ISO. Nothing goes missing unless there was a error in the conversion.

The only good thing is the ISO are faster than CSO

Yeah, the only time anything is removed is when the game is a rip.

Pardon my ignorance; what is a rip? How can I tell when I'm downloading a file whether it is one or not?

A rip is when things like SFX/Movie sequences/Music/etc. are taken out. The person that uploaded it should tell you if it is a rip or not; that's just about the only way you can tell if it is a rip.
