n00b needs help transforming DVDs to best quality single file to watch on HDTV?

Hey there, sorry if this isn't the appropriate place to post this (or if it has been posted previous... i DID search for ~hour):

I've recently hooked up a computer to my 51" plasma and i'm trying to figure out the best way to get my DVDs backed up onto my new media center's HD and then play them back in full screen (1080i) on my HDTV.

So far i've been "shrinking" my DVDs NP with DVD Shrink and just playing back the raw TS_Video files using The KM Player. Resulting video and audio generally look and sound great (there are def annoying occasions where the playback stalls for no apparent reason and i have to skip ahead in the file to continue but i'm assuming that's some problem/scatch w/ my original DVDs).

Problem is when KM Player moves between the .VOBs, which it does automatically thankfully, there is an annoying split second pause. Do folks in my situation usually further massage the DVD Shrink output in to a single file (xvid/avi?)? If so what tool/settings should i use to maintain uber HD quality?

Ok here's a post late night trial and error update: Rather than try and migrate my VOBs to AVI, i've somewhat settled on using DVD Shrink to either create a single VOB (not split) or an ISO and just playing that. Any benefit to choosing one over the other (besides the fact that i can't get my beloved KM Player to play the DVD ISO, only VLC)?

PS - As sort of a side question, does it matter what resolution i have my Vista Premium desktop set at on my 51"? Currently the best display for me (keeping text readable from my couch, etc.) is 1280x768... fine for DVD-quality/HD playback?
