how quick/easy remove extras from a DVD?

After ripping onto hard drive - no encryption.
How do I select and remove things like trailers at the end of the movie?
Please advise what software to use.

After removing them do I need to reencode before burning and what should I use for this?

Try using DVD Shrink.. It's an awesome program for ripping the dvd to your HD and encoding it to fit on a dvd-r plus it lets you select select the main movie seperate from all the extras, you can even drop the other languages so the video file won't have to be compressed as much.
