Swapping HD's on the cheap?

So I've done a little bit of research for swapping out my 20GB hard drive on my Xbox for a 120GB one.

Can you copy the old to the new using your PC or is everything lost? I've read you can but then I get conflicting answers since once you hook up the new harddrive the Xbox formats it immediately? If its formatting it...wouldn't it erase everything that is stored on there?

I HATE my work website restrictions...for whatever reason I can view and post...but not search this website for answers.

Hoping someone has some insight.
