I am backing up some of my movies and putting them on an external hard drive so that I can play them on my laptop while on vacation. After my discs get done backing up, there are many audio / video files created. Do I need to copy all of these to my ext. hard drive or just the largest .vob file?

More then likely there will be more than one vob containing the movie..So yeah put the VIDEO_TS folder on external HDD..If you want a single VOB or MPG, use Vob2mpg to extract and create a single .MPG that you can put on HDD..You could also backup to a single VOB with DVDshrink or even DVD Decrypter in IFO mode..
