I have a 57" Sony HD display and it supports 1080i. What I am wondering is that since DVD resolution is not this high, what is?

ive seen some dvd players that have an upconversion feature that outputs dvd to 720p and 1080i. how does this work? what cable does it use and how will it affect my picture?
