help preserving 5.1 audio copying to Panasonic dvd-r deck in US

Hi, just got a 1500 and flashed the firware easily. I have it hooked up to a Panasonic DMR-HS2 (the big brother, with hard drive, of the E30) and am able to make great video copies with the s-video connection. My trouble comes in the audio. Given that both decks only have RCA audio connectors, is it possible to get Dolby 5.1 sound during copying? The copies I've made have been only in 2-channel stereo.

I got a tip from a British guy who said he preserves the 5.1 by using an RGB scart connection. My question was, "what the hell is an RGB scart connection?" Apparently in Europe this is normal, but here in the US we don't have such a connection that I know of. So, does anyone know if it's even possible to get better than 2-channel sound in the US with the set up I have? Thanks very much for any advice.
