Just updated my 3G to 4.1. I could immediately tell a difference in the speed. The phone is overall more responsive. Safari seems to run faster as well as the Google apps. One specific app, the ESPN ScoreCenter, used to take about 10 seconds to open now it loads in about 3.
Too bad iOS 4.1 breaks your jailbreak. And if you need an unlock, that's not the worst news: even if you have SHSH blobs for a previous iOS version (so that you can recover back to a jailbreakable iOS), 4.1 permanently updates your baseband.
Unlockers need to avoid 4.1 until the TinyUmbrella is updated.

Naah, you just have to run the TSS server thingie in TinyUmbrella 4.1.3 while iTunes is running. After you took care of that you just download ios 4.1 and RESTORE your iPhone with it. That way your old baseband remains and you still run ios 4.1.
This being said I must add that I didn't try this method myself as I'm still on 4.0.2 as long as the jailbreak isn't released.
It's because I do believe that only those who maintained their old baseband will have the possibility to perform an unlock.
