Producing a series of movie clips

I'd like to put together a DVD of favourite short clips from different films (e.g. 2-5 mins each), ideally with an index picture for each so I can skim through the disc easily to choose the one I want to play.

I've had a good search through the site and I think I'm building up a picture but would like clarification of the best way to do it, please!

Can I just rip the specific clip I want, e.g. using DVD Shrink (thereby saving me having to buy Nero or similar)? Or would I be better off ripping the whole lot then using Nero to select the bits I want afterwards?

As yet, I haven't obtained any of this software as I'm still trying to deduce which ones to get hold of, so I really am a Newbie!

Any help very much appreciated.
