Compressing video prior to burning to DVD

I have recently bought MVS WinDVD as part of my setup to transfer some old VHS to DVD. I have a couple of problems with the process:

1) I have managed to capture the VHS onto my hard disc, but in black and white only.

2) When I try to burn to DVD it only captures about 10mins or so. Sadly Win DVD does not tell me I need to enter a new disc, but the same process in Roxio Media Creator tells I need several discs to complete the burn.

Why am I getting a black and white image only and is there a way of compressing the file on my hard disc before the burning process?

Any help most welcome!
