Ifoedit crouching tiger for english audio

I used DVD Decrypter(files) + DVD Shrink + Nero to make a full backup of Crouching tiger hidden dragon. Excellent, everything worked (menus and all) when played on my PC and when played on my Aiwa DVD player in the lounge, but when I tried to play on the PS2 in the games room it was all blocky (presume the PS2 was not able to cope with the compression from DVD Shrink.).
I tried DVD Decrypter(files) + Nero to copy movie only, which played OK but with the default audio of Mandarin. I was not able to change the audio channel on the PS2.
I tried DVD Decrypter(streams) + Nero and de-selecting the Mandarin (and subtitles), which still played OK AND with the Mandarin audio. The VOB files still seem to contain Mandarin audio and subtitles even though I de-selected them!

Can I use Ifoedit to make English the default audio? If so how?

or

Can I use Ifoedit to create a menu that will enable me to select the English audio channel? If so how?

P.S. Nero is v5.5 OEM.
