Separating each track from 5.1 into separate files?

As you can tell by my question alone, I am not an expert at this stuff. Here's my problem (and I know I can't be the only one). I can't seem to find information ANYWHERE about isolating individual tracks from surround sound. I am not interested in keeping 5.1 and burning it onto a regular CD-R. I want each track separated and then saved as a mono or stereo .wav file. It would be excellent for remixing. I know this can be done because I've found songs or soundfiles on the internet that were obviously created this way. If this can be done with DVDs, then I'm assuming it can also be done with DVD Audio.

An example of why I want to do this? I have several concerts on DVD and a DVD Audio of Fleetwood Mac that have a track with just vocals on it. I want to extract these files and separate them from the music.

I apologize for rambling on about this. I am frustrated and have been searching a long time for the answer to this problem. If anyone can help me or direct me to a valuable source, it would be greatly appreciated.
