i just loaded gt3 from disk to my ps3 hdd plays great but when i try to do the licences my ps3 freezes and i have to turn it off and back on any ideas

You could always get the licenses playing from the disk if that is the only problem area.

it says i need game version 1.07 but wont this delete my cfw if i update it

No you need the latest firmware to download the game patches from your ps3, there are a couple of tools which let you download them using your pc, you then add then to a usb stick and install from there.

Think of of them is called awesome update manager, you need to use the code of teh game though, eg. BLES-00584
