Why partition a hard drive?

I just installed a new hard drive in my macbook. Upgraded from 60gb to 500gb. I used super duper to transfer all files. Before I started to transfer my files from the external hard drive to the new internal hard drive I was asked if I wanted to partition this drive and how many partitions I wanted. I was not very familiar with this process so I selected 1 partition. Is this going to give me problems in the future? Can I partition the hard drive now or is it a one chance thing? Im not really sure how partitioning works. From what I read about it, this process divides the drive into different sections and speeds up the search process and helps with data loss. What Im not sure about is, is this process of dividing my files done automatically, or do I have to select what part of the drive they go to? How many partitions should I have used. If I were to buy a computer from a store with a 500gb hard drive how many partitions would normally be used?
