Will Asus Matrix GTX 580 fit Arock Z68 Pro3?

Either would work, and of the two, GTX560 Ti SLI will be faster. However, in a few months' time a new graphics generation will appear, so you may want to consider whether it's worth waiting for that to arrive or not.
