I know it's possible to group content on the PS3. But it only groups by date, size, name, etc. What I want to do is something like put movies in one folder, my kid's Disney movies in another folder, family videos in another folder. The same with pictures. Is it possible?

Yes it is.
1) Press triangle on the file or item (picture/music/video) you want to organize
2) Select information
3) Go to the "Album" label
4) Enter whatever name you want it to be for that "folder"
5) Go back to your XMB & press square until the files are sorted by album

How the heck did I miss that?!?! It was right in my face. Thanks.
By the way, can content such as "R" rated movies be restricted? Or possibly by putting "R" rated movies into certain folders and restricting the folder? I got two smaller kids that I only want them to have access to their "Kid's Movies" folder.
