Ripping DVD's larger than 4.6 GB

Instead of compressing the size of larger DVD's, is it not possible to simply use an 8.5 GB DVD to burn to instead?

Also, I'm new to the whole process and I'm using a MAC. I've read the tutorial for mac's, but I wondered if there is any updated info anyone can provide to get me started as the post seems to be several years old.
