Do your original CD games work? It really is as simple as making a 1:1 copy of the disc using your favorite program. It could be a problem with your modchip.

PS2 - v8
Mod - Magic V
Burner - CenDyne (Pioneer) DVR-A05
Media - Anything Cheap

Gamecube w/Broadband Adapter
Phantasy Star Online
Animal Crossing Loader v1.4
Phantasy Star Uploader v1.1
Gamecube ISO Ripping Server v1.0.0.29

The Matrix Infinity is supposed to auto-detect the type of media and whether the game is PS1 or PS2 format and boot it accordingly so there should be no issue there. Plus we're talking about PS2 CD games, correct? If so every no-swap mod that I'm aware of boots PS2 CD's and DVD's using the same mode (PS2). What version PS2 do you have and what brand of media are you using?

I was not aware that Ritek made CD-R's but if your machine is a v7 that should not really be much of an issue. Sounds like there is likely a problem with your modchip install. I would go to the person who did your install for further assistance.
