I want a DVD Recorder with component inputs and outputs, do they make them? Does anyone know of any?

How does recording work on a write once disc? Can I stop recording, then continue recording later where I left off on the same disc? Or does it finalize the disc once you stop recording? Is it the same on all models or does this vary from model to model?
