Can burned DVDs be edited ?

Hi, my 1st post here. Tried a search, read some of the rules (sorry i'm 70 and sometimes a little impatient), not sure where to post so slap my wrist if necessary and i'll try to smarten up next time.
I have been copying VCR tapes of family videos to DVD using the Sanyo DV500 recorder. My simple (?) questions:
1. What format do they end up as on the DVD?
2. I can play the DVDs on both DVD player and also on my puter DVD. Is there a way to extract from the DVD to the puter so I can edit and reburn to the puter DVD ? Puter is 3200Mhz, ATIAIW pciexpress vid. card, 1 gig ram with DVD player and DVD burner using Nero. Pinnacle 9 (stripped down) came with ATI video card.
