I've read a lot of posts regarding getting rid of the extras and copying movies using DVD Decryptor and IFO Edit and the like. But, how do I only copy the extras I want and not the movie? For instance, I'd like to just create and entire CD (complete with my own menus) with nothing but deleted scenes, alternate endings and perhaps some music videos. What procedure would I follow? If this has been posted before, I apologize - I couldn't find anything like this.

Well, I guess you only burn the movie files you want - I suppose you rip the DVD and take out the movie files you don't want or of course if you have an authoring software, create your own menus and just copy use the movie files you need/want.
