Whats the difference between recordable formats?

It seems that - came before + but why won't one format record on the others recordable disc? Does one format have any better advantages over the other? Is the laser different between the two types of recording systems? So many questions so little information seems available about this mysterious issue. It seems that I read some where that the "dyes" used in the production of the discs is what makes them incompatible, but I also understand that the laser length contributes to the incompatibility which really make any sense to me as there are dual format recorders which can record on either format.

If knowledge is power then why do I so feel powerless

Remember Betamax tapes and VHS??? The are both tape media but incompatible with each other and eventually one overtook the other.

I dont have so much of an issue with - or + formats because at the end of the day, whichever type you record on most players will recognise the format, as such, but what does frustrate me is the varying compatability with the dyes used & quality of manufacture.
ie; take any brand of -R disc you like, record on it, then see how many players you find have a problem with playback.
In my opinion, if the machine says it will play DVD ROM, DVD-R , DVD +R etc, it should also be able to play, without error, any particular brand of that chosen format and it seems the problem is both the quality of the media and the electronics of the player.
Also what confuses me is that this incompatibility only seems to be predominant in video recordings but if I added a load of word , excel or other office files to a dvd disc ,of any kind, then a P.C would not normally have any trouble reading the information unless the disc was damaged. So what's all that about??
