Best Way To Convert DVD to MPEG1?

I have backed up my movies using dvd decrypter and dvd shrink, I would love to get the VOD files converted to mpeg1 to use on my Dell Axim with PocketTV. What is the best way to convert to MPEG1? And will the conversion allow me to align the movie at a 90 degree rotation so it can be viewed landscape?

Final question, I record TV as mpeg 4 to my harddrive with an all-in-wonder card, are there any tools that I need above that will compress these files as well?
