Well they couldn't decrypt the original xbox signature, so they won't crack 360 encryption either. If you know something about cryptography, then you know that it's relatively easy to do an encryption that takes tens of years to decrypt with brute force methods. And I bet that microsoft put an whole lot of effort to it.
EDIT:
Even if they could decrypt it, 360 also detects the media that is in the drive. So even if they were signed, but on a burned disc, then it wouldn't work.
