i downloaded a TV series in .mkv format and it came with 2 audio channels, is there a way i can select which channel i want to use before i convert it to .avi ?? Also is there any good .avi to DVD conversrion programs that will allow multiple .avi's onto 1 DVD ?

Well if the video stream is VfW, you can just Demux to AVI. If you are using mencoder to convert you can use -aid to specify which audio stream you want.

Otherwise Demux the stream you want with mkvextract or remux the mkv with only one audio stream using mmg/mkvmerge, then convert.
