OK, I am not an expert so I apologize for my stupid question...

I have the option of 480, 720, and 1020(?) with both "p" and "i"

What is the difference, and what is generally regarded as the best picture?? Also, if one picture is better than the others, why are the others even an option??

There are different resolutions because tvs have diffrent capabilites.

Standard Def - 480i (equivalent to Analog TV)

Enhanced Def - 480p

High Def - 720p, 1080i, 1080p

Well as someone previously said

i is interlaced
p is progresive scan

First you must understand that interlaced is that each pixel is not changed each frame and in Progressive in each frame the pixel changes giving you a better image quality and the numbers of 480i means that there are 480lines of pixels but interlaced of course the best quality will be 1080p cause there are 1080 lines in Progressive scan which will give you astonishing pictures
