My favourite program is the filmmachine, in conjunction with hcenc. get it here: http://www.afterdawn.com/software/video_software/video_tools/the_...
There is a guide here: http://members.home.nl/thefilmmachine/help/filmmachine_help.htm

Sorry for the delayed reply, having trouble with the e-mail at the moment. You'll need a program called winrar to open that file (get it here: http://6URL.com/0K14) Feel free to pm me if your still having trouble.

For example: I have most of lost season 2 on my computer and i could easily fit 3 episodes on 1 dvd, but i dont want them to run through the whole thing from start to finish, i want to be able to select each episode seperatly from the begining. if this is possible please help me again. CHEERS

You can put them into chapters but im not sure how you would go about adding menus.I'll look it up.
EDIT: Right, I dont think its free but TMPG DVD Authors probably the way to go. First, create your dvd files with the filmmachine (make sure you create files not an iso) and then So now we use TMPG DVD Author and "import from a DVD", this will add all the files you added to the filmmachine and partition out all the chapters for you. You can fiddle around with the chapters to get them in the right place, but make sure you don't remove the first or last one, as the final DVD will skip around strangely. Once their all in the right place, skip to the next step, and have a look at your menus. I would suggest creating a custom set of menus for each DVD you make, as it then allows you to change the look of the menus a lot more(And its easy too). Note that TMPG does not let you create your own menu graphics, but this is hardly an issue for tv episode discs. Get your layout correct, and get the software to write the files to the disk, which will take approx. 15 minutes on most computers. Now simply make a new DVD movie disk in nero, and burn all the files in the Video directory of the new disk. Alternatively, if your feeling adventurous, you can simply use the burn DVD option in TMPG DVD Author to put it straight on a disk. The program can be found here: http://6URL.com/0KQ8
Also if you want a clearer guide on how to use the prgram: http://6URL.com/0KQ7
hope that helped!
