Not sure if the Chinese Sub is burned to the image or video file. If it's a hard subtitle (burned to the image), there might not be a way to remove it.

As for adding SRT file to the movie, check out this very detailed link. It's one of the best guide I found.

You might also try a program from VSO, ConvertXtoDVD. I tried it but didn't like the trial version. It leaves a watermark on the video every 2-3 mins in the movie. It also does not allow me to add SRT to my videos before I burn it to a DVDR.

Put your .AVI file in a folder by itself, no other files. Open the .AVI file with Virtualdubmod.

http://virtualdubmod.sourceforge.net/

Scroll through the video. If you see subtitles on your video then they are hardcoded onto the video. There is no way to remove them. The best you can do is to apply filters to block them out and really, this is not worth the trouble. Forget it.

If you have an .AVI file and an .srt file and you just want to watch them, then you can put them in a folder and name them the same, e.g. MyMovie.AVI, MyMovie.srt. You can use software on your PC like Media Player Classic to watch the movie with the subtitles.

http://sourceforge.net/project/showfiles.php?group_id=82303&packa...

Also, You can burn MyMovie.AVI and Mymovie.srt as a data DVD and some of the newer DVD players (not all) will play them. If you wanted to author a new video DVD from your .AVI file and .srt file you could do that too but that's lots more steps.
