Is there a high def converter?

I have multiple files that in HD and I would like to burn them to dvd's. I have couple of questions.

1)Is there a converter that will keep the video in HD instead of downrezzing to 720x480?
2)Reading the guides says to select 4:3 for the formats. Since these are widescreen already should I go ahead and pick 16x9?
3)I'm going to look for another forum on this, how noticible is the watermark using DVDSanta? Since I have a mix of formats it would be easier for me to use this software.

or try to convert it to .iso and burn it with DVD Decrypter (free software). hope that helps
