How to rip a movie and merge deleted scenes?

I've been surfing on the net for a while and been overwhelmed with the information about ripping and editing. Basically I have a movie on DVD and it's deleted scenes on another. What I want to do is edit the deleted scenes to the main movie. I'm not shure what the best way to go about it. I'm thinking I'll have to rip the files first and convert edit them later. What programs should I use? Can I keep the AC3 audio channels for this?
