I have Shrek 2 ripped in English, but also want it in only French, is there a way for me to rip the French 5.1 from my dvd and replace the English on the rip ?

The 'English only' rip is an AVI?
You also have an original DVD with a French language track that you wish to use as the only track on a new AVI?

You can rip the DVD, open it in 'AutoGordianknot' and select the French track before saving to AVI.
Ripping the original DVD may present problems if the disk is protected.
In that case you would have to rip it using the likes of 'DVDFabDecrypter'.
