Burning specific scenes of different DVD's to one DVD? Software?

Hi all,
I use CloneDVD2 to backup movies and I love it. But I would like to make a compilation of many scenes from different movies and burn them to one "best of" DVD. This must be possible but I don't know what to use. I guess I'm thinking of the days we copied to a VCR tape and paused and started the VCR wherever we wanted, like leaving out commercials.
I'm running a Dell XPS with a large hard drive and a DVD reader and a DVD burner.
