Stereo In, Digital Out... efficient?

I had a question... I use a home theater system that has a digital coax-input, and for now, I am running the toslink-optical from my PS2 through a converter, then coax-digital to the system... However, my TV has optical-out, so my question was... If I use the stereo-out from my PS2, then into my TV, and then optical-out, will I get the full sound quality? Or will the stereo-in make it only stereo-out?
I have an Xbox 360 also, so I was wondering if I could use this for all of my inputs to the TV so I dont have to change the input for the converter when switching game consoles.
