Achieving optimum video capture quality

I am using Nero Vision to record from a vhs onto my computer. From there I will convert to DVD.

I am using a nvidia WDM video capture card, which has an S video connecton, so I bought an S video to RCA adapter, and then I plugged that into my vcr. So now when I am in video capture mode, i am having some problems with trying to understand the proper settings while recording. When capturing to MPEG2, I have the following settings:

Video Mode : NTSC
Aspect Ratio: 4:3
Frame Rate: 29fps
Size 720 x 480
Sampling Format: Progressive
Audio: Stereo

I notice that the size of the file is huge.... I am thinking that I must be doing something wrong because recording off analog vhs, I may not need to have top quality anyway?? Maybe I am doing this wrong, the other options are "DVD" which appears to be the same as above, with less setting options. There is also "nero digital" or "AVI". AVI seems to have large files as well.

does anyone have any experience or advice in terms of optimal settings to record from my vhs onto my computer (then eventually burning into a DVD)?

Any advice would be greatly appreciated, thanks in advance.
