How do I add subtitles which are optional like on commercially sold DVDs? can I do this with Nero or do I need to get some other software to make a menu where the viewer can select subtitle preferences before watching the DVD? I have Nero 7 by the way.

Nero 7, DVD movie subtitles are not supported.

AVI2DVD can use AVI (or DVD files) as the input and optionally add .srt subtitles to create a DVD folder which can be burned to disk.
