I'm currently using Nero Ultra Edition 7, some of the DVDs I'm using the default speed is 16x and sometimes the burn fails at 16x, they work at 8x. Sometimes I forget to change it to 8x and then it is too late. Is there a way to make it so it burns at 8x as the default speed?

Like binkie says, I don't think it is possible. Unless there is some registry tweak. The only time the burn speed is set is when using DVD Shrink to transcode and Nero launches automatically from DVD Shrink.
