what's the best way to capture audio from a dvd...that can then be edited and cleaned up? i have a portable toshiba dvd player and a dvd drive on my dell. is there a better quality way than using headphone out to input on my computer and using roxio audio capture?

Yes. There are many tools and techniques that allow you to 'extract DVD audio'. That would probably be a good search term...
