I am looking to go from windows to Linux or possibly Free BSD and was wondering what programs are the most popular for DVD ripping?

Big subject.

Currently I use acidrip and a mixture of avidemux/dvdauthor and others to get whatever result I want.

Basically you have to try things until you find a process which works reliably for you. I have about 6 different methods, but a 1 to 1 copy with all menus etc isn't possible unless you really know what you are doing, and precisely how dvd structures work.
