Converting HD-DVD (evo) to MKV

I have several HD-DVDs that I was hoping to convert to MKV. Anyone have suggestions (I already have the HD-DVDs ripped to my HDD, I would just need to convert the EVO files). I downloaded EAc3to_more_gui, but I am lost as to the interface. Ultimately I would like to have the HD-DVDs backed up on my computer, but to save space keep the mkvs around 8 GB. Any help would be grateful. Thanks
