Recording DVDs from Sky+ Box with original Dolby 5.1 Sound

Is anyone able to advise how I may record material from my Sky+ box (Satellite PVR), maintaining the original Dolby 5.1 sound that is output through an optical cable?

I have a capture device to capture the video and I can send the Dolby 5.1 signal through the SPDIF in connection on my soundcard. My soundcard supports SPDIF passthrough.
